Roasted Garlic Potatoes w/ Tofu Hash

This recipe is the perfect way to get your garlic, comfort food fix and it's completely plant-based! Try this simple and easy recipe and let me know what you think!

 

 

 

Ingredients:

 

For the Roasted Garlic Potatoes:

5 small potatoes

3 cloves garlic, minced

1/2 teaspoon dried thyme

4 tablespoons extra-virgin olive oil

3/4 teaspoon sea salt 

a few shakes of freshly ground black pepper

 

For the Tofu Hash:

1 half of the 15.5 oz organic sprouted tofu extra firm (Trader Joes), cut into 1/2 inch slices

2 stalks green onions

3/4 teaspoon sea salt 

a few shakes of freshly ground black pepper

fresh cilantro for garnish

 

Let's start with the Roasted Garlic Potatoes!

  1. Heat your (toaster) oven to 400 F (200 C).

  2. I'm a lazy cook that tries to minimize dishes so I actually use the same container to mix and to cook sometimes, especially in baking. I love Pyrex! I spray olive oil into the Pyrex first and then I add the ingredients as I chop.

  3. Scrub the potatoes well and peel. If you like the skins on, keep them on! Cut the potatoes into 1-inch pieces. Add the minced garlic, olive oil, salt, pepper, and thyme. Mix well.

  4. Roast the potatoes for 20 to 25 minutes, or until browned and tender, turning them every 10 minutes.

     

     

As the potatoes are cooking, let's work on the Tofu Hash! 

 

 

In case you were wondering! I love that Trader Joe's has this delicious organic sprouted tofu that comes in 2 separate containers, each container is portioned perfectly for 2 servings.

 

  1. Slice the tofu into slices about 1/2 inch thick.

  2. Finely slice the green onions.

  3. Use medium heat as you heat your pan.

  4. Add olive oil to the pan.

  5. Add the tofu slices and use your spatula (I recommend bamboo cooking tools!) to mash the tofu into smaller pieces.

  6. This is the hard part: you have to let it sit for a bit and not stir too frequently so it gets some time to brown. Great time here to season with salt, pepper, (I like to throw in other spices like garlic chili or Trader Joe's 21 Seasoning Salute)

  7. When the tofu is almost ready, add the green onions, stir and mix well so that the green onions and cook a bit and turn off the fire.

Cooking is all about time management. Make sure to stir the potatoes every 10 minutes and the tofu does not take much time to cook, I would say about 10 minutes at the most. If the potatoes are done before the tofu, you can turn off the oven and open the door a crack so that it can breathe (yes the potatoes need to breathe!) and not get soft. 

 

When both are done cooking: I plate the potatoes first, and then the tofu hash on top, garnish with fresh cilantro. This recipe makes about 2 servings.
